We use Capacitor in fan motor to shift the Phase difference
between two winding

all the previous answers added together gives correct
answer. in three phase motor phases are already split and
produce resultant torque to rotate or start motor. Single
phase produce zero resultant torque and needs to split the
phase which is done by introducing capacitor in starting
winding.

Introdusing capacitor in ceiling fan motor to improve
starting torque with the effect of leading power factor to
make motor self starting.
Torque=Is*Im*COS@
Is=starting winding current.
Im=main winding current.
@=angle between Is&Im.

At the time of switching on the ceiling fan(without
capacitor),a pulsating flux is produced, which will not
help to revolve the fan and by using capacitor rotating
flux can be produced, which revolve the fan.

Capacitor is an energy storage device....so it stores the energy in terms of electric field.....and as we know the motor used in ceiling fan is not self starting....so capacitor is used to start this motor by the electric energy stored in as an electric field....
