I will explain you by taking one example

Take Account group for example

As per your business requirements you select some fields
like required ,some with supress ,optional...etc so that
means u r customizing your standard sap accuont group to as
per your requirement.

and at the same time without account group and partner
determination we will not able to create customer master.
so how many account groups are required ..based on that we
will configure and we will do the necessary assignments ...

customizing means whatever changes we do with help of Abaper's ex. All enhancements.
