why dont we connect the two 12 V DC batteries in parallel,
for an inverter (UPS)?

you can not connect two or more batteries in parallel even
if they are identically the same. No two batteries have same
terminal voltage and internal resistance which will produce
circulating current between them. This condition will
discharge the batteries even without load. Although you can
connect batteries in parallel while charging only.
