There is no too much parameter we need to consider,
1, K type thermocouple is most Liked one, Because of its Most linear response to Temperature from other types,

2, Oxidation criteria also plays a role,

3, Different thermocouples are better at diff regions of
temparature, For ex, when you need to measure a
temparature ranging
normally at 400 deg Celcius to 450 Deg C means refer the
refer the Temperature Curves for all themocouples and
choose which one is most linear at that particular
region,
