Un saponifiable matter (U.S.M) are the higher aliphatic alcohols, sterols, pigments and hydrocarbons. These substances frequently found dissolved in fatty acids (oils) which cannot be saponified by caustic (NaOH/KOH) treatment performed by AOCS method.
