there is no particular reason to give the colours...any
colours can be given to the phase .its just to differentiate
each other.in asia its supposed to be a rule to use 1ly red
blue and green......

still u gonna use single phase loads to the most... u have to identify the loads connected to each phase to sort out it during a fault condition...
to simplify fault finding process.

Normally different colors used to identification of phase and neutral in a transformer. almost every where using the co lours for identifying the phase sequence as given below
Red = R , Yellow = S , Blue = T , Black = N
