Literally, a mnemonic is anything that helps to remember.
Since it is difficult to remember the task of so many instructions just by remembering there hexadecimal codes, manufacturers have provided symbols for instructions which are easy to remember and use. These symbols are known as mnemonics.
e.g the hexadecimal code of 'ADD B' instruction of 8085 is '80H'. Now obviously anyone can easily identify the mnemonic ADD B instead of 80H.
