What is under cooling and supercooling?

Super-cooling may happen if a liquid is very gradually
cooled and stirred very, very gently. In such events, the
liquid stays in liquid stage (phase) well below it's
freezing point.
If such super-cooled liquid is disturbed or strongly
agitated, it suddenly freezes!

Undercooling is same as supercooling.
The liquid is cooled below its freezing point without solidification.
But how is this possible?
Ans : Just imagine icecube tray. What happens if u remove the tray premeturely? U can observe small ice flakes floating on water. Take a spoon and stir it and note temperature. You can see that the temperature of the ice water is still below the freezing point but it is still in liquid form.

subcooling and super heating are used as a view to increase
the COP of refrigertaion.Subcooling is used to extract the
sensible heat from the saturated liquied to ensure that
that the refrigerant is not having any partial vapour
pressure in that.So now only saturated liquid is allowed to
expand inside the expansion valve.as a result of this COP
increases

under cooling means cool liquid up-to freezing temp.(e.g. 0
degree for water) and if we further continue to cooling then
cooling beyond freezing temp. is called super cooling.(e.g.
decrease water temp. 0 to -20 degree)
