By definition a mordant is a substance that set dyes. It doesn't really contribute to the colouring of the bacteria. In gram staining procedure iodine act as mordant by making crystal violet-iodine complex which actually retains in gram positive bacteria and not in gram negative bacteria, because of this complex gram positive bacteria appears violet in colour.
