Answer / biomaster
The phenomenon of Mutarotation appars to be due o the
changes of alpha to beta forms and vicecersa via straight
chain aldo or keto form.when an equilibrium is attained
charecterestic rotation is reached.
Mutarotation takes place only in presence of amphiprotic
solventlike water.
when Mutarotation takes place ring opens and then recloses
either in inverted position or in original position.
for ex the absorption spectra of fructose and sorbose in
aqeous solution indicate the presence of open chains forms
the aldoses .

optically active compounds dissolved in a solvents and
allowed to stand. optical rotattion changes nuntil it
reaches a constant value. the change in rotation is
cvalled mutarotation
