To change the mail format in Microsoft Outlook, go to 'File' > 'Options' > 'Mail.' In the 'Compose messages' section, click on 'Stationery and Fonts.' Under 'Reply using this stationery,' select a new template if available or click on 'New Stationery...' to create a custom one. You can also adjust font settings, spacing, and other options.
