The sugar-cane is first crushed by passing through mills consisting of iron rollers. This operation is carried for three or four times with the addition of water. The second step is classification of the juice. Lone is added to precipitate phosphate and organic acid and then heated to coagulate protein. These solids are removed by passing the juice through filter press and are then called press cake. Before classification sometimes SO2 is added to beach the juice. Crystallization which is the fourth step. This process consists of evaporating the syrup to a content of about 90% solids and the forming crystals. The last step is separation of the mother liquor or molasses from the crystals. This is done by centrifuge machine the walls of which are lined with fine mess wire screen. After which the sugar is refined further.
The main three bi-products of sugar industry are bagasse press mud and molasses. They are used in many industries. For example bagasse for paper industry press mud for fertilizer and molasses in tobacco industries.
