concrete setting is a chemical reaction called hydration, for hydration the presence of water is required.after the placing and finishing of concrete the water will start to become dry because of hydration and evaporation due to atmospheric temperature ,so we need to pour water on the surface of concrete and to cover the concrete with some rug or plastic sheet to reduce the water loss. the process of keeping the concrete wet until it set is called curing..
