What all infotypes which has to be created at the time of
hiring OR PA40 and cannot be maintained later with PA30 ?

At the time of hiring thru PA40, the IT which MUST be created are 0001.
Without this data, the PERNR will not be assigned to the employee and so the record cannot be accessed thru PA30 for changing/ updating.
However, please note that the infotypes that need to be updated for any action are defined by the Client, depending on their business process, in realtime.
