For my point of view, and it depends as well of the
qualities looked for by the interviewers but an answer of
this sort should do the job:
"I have been working for xx years for xx company. During
this time I have done (that), (that) and (that). I succeed
to do (that) and (that). I reached now a time where my
position and/or my company fail to propose me an adequate
challenge. This is why I am now looking for another position
in a new company and that I am turning to you where there
would be many challenges to face.
