Cutover strategy or Cutover plan is the activity done in
ASAP methodology, while transfering the data from the
lagacy system to the sap system.At this point of time the
billing will be stopped,all the open
orders,contracts,pricing data will be transfered as per the
cutover plan which is provided by the implementation
partner.what ever you want to do on the system u need to do
before or after this activity.

Generally in implementation under final preparation phase
we do the cut over strategy whichich is nothing but the
data load strategy .This plan the strategy for data
conversion.And which data will load first for example
masterdata or transaction data all planning and strategy
known as cut-over strategy .

cut over strategy depends upon how the org. design their load strategies.normally we decide the sequence of data load for configuration settings, master data, transaction data,which follow whom and then u make a copy of the system a day before and after checking the successful data load.

During the cutover plan activity, transfering the Data from the legacy system to SAP system(Production server). and that time all the bussiness transaction will be stop.
After that upload or Transffer all the Master data and Transaction data into the Production server through LSMW or BDC.
